Carrot, Parsnip and Scallion Fritters on Arugula Salad with Goat Cheese Dressing

This was a total clean-out-the-fridge recipe, but it worked pretty well. I think the fritters themselves wouldn't be much to write home about, but the addition of the tangy, lemony, oniony goat cheese dressing (I added some minced scallions to the dressing in addition to the parsley) and the spicy arugula made the dish.
Pretty healthy, too!

First Asparagus of the Season


First asparagus of the season combined with the last of the parsnips (hoorah!). Served with the white wine chicken and mushrooms recipe that I've made before, using the thyme and mushrooms from the CSA and the tarragon off the roof.

Parmesan Parsnip (and Carrot) Fries

This is a tasty way to eat the parsnips I keep getting in my CSA... partly crisp, partly soft and roasty, totally covered in shredded Parmesan. I added in some carrots for color and served it with maple-mustard glazed chicken thighs (which were also really good).


I am ready to be done with these things for the season, though. Bring on the asparagus!

Tomato Parsnip Soup


Googled the ingredients and came up with this "wicked" recipe. Made with canned tomatoes, parsnips from the CSA and sprinkled with dill from the Aerogarden!

Served with tuna melts and green salads.

Lovin' the latkes.


These honey-ginger carrot & parsnip latkes are the BOMB! I made them out of necessity (many carrots and parsnips came in this week's CSA share), but ultimately, with the addition of some great applesauce and some sour cream, they were totally worth it.

Also, the perfectly cooked pork tenderloin wasn't too bad either ;-) Made on my double-burner cast iron grill pan.

If you're wondering about the lack of green veggies in this meal, don't fret. We had big green salads using the baby greens from the CSA. They just didn't make the photo...

Deliciously local...


Yum... spinach, beet, goat cheese, walnut and dried cranberry salad. This is our new standard salad. Even better with chopped apples instead of the cranberries. With balsamic vinaigrette.

Homemade bread and local sharp cheddar cheese from Whispering Brook Cheese Haus, grilled. Mmm.

Curried parsnip soup with apples... parsnips and apples care of my CSA.
