Faux Cheesesteaks

In honor of the return of The Jersey Shore, I cooked up some peppas and onions, a la the Sitch.
Ok, not really. I cooked peppers and onions because I got a giant bag of banana peppers from the CSA, which I thought would be the spicy ones, but turned out to be sweet.We turned them into faux cheesesteaks- toasted hoagie rolls with a little mayo, sauteed peppers, onions and mushrooms, and thinly sliced roast beef and provolone. Throw it all together and toss it under the broiler for a couple minutes to warm up and melt the cheese. Ta da: faux cheesesteak.

Roasted Sweet Potato Salad with Black Beans and Lime-Chile Dressing

This great salad, from The Minimalist, Mark Bittman, is basically a fall version of this corn and black bean salad I made all summer. I'd definitely recommend this salad- the flavors are awesome together, it's got a ton of color, it's super easy. The only change I made was to ease up a little on the olive oil, and add a little bit of cumin.

Chipotle Tamale Pie

Made this chipotle tamale pie thingy for dinner because I needed to use up a can of chipotle in adobo I had opened... it was basically chili with a built-in cornbread top, but that's fine by me! We needed a break from root vegetables. 2.5 months of eating things that grow underground can get a little old.

I made a bunch of substitutions based on what I had in the house (and what I like): ground beef instead of turkey, yellow and orange peppers instead of green (green = gross), black beans instead of pinto. Plus I threw a handful frozen corn in, too.
