Maple Glazed Baked Apple Doughnuts

Recently I bought a big bag of apples from Malang (a city located at the foot of Mt. Bromo in East Java) and was looking for something to do with them.  I saw these tasty looking baked apple doughnuts with maple glaze on the Artisan Bread in Five Minutes a Day website and thought I would give them a try (although I made a mini version).


While they were not particularly difficult to make, I can't say they tasted much like doughnuts.  Tim and I decided they were more of a sweet apple biscuit.  Honestly, I think unless it's fried, it's not really a doughnut.  Oh well.  Tim's colleagues at the office ate them up anyway.

Apple Pancake Rings

I found this recipe idea via Pinterest, but it originated with Carla Hall (former Top Chef contestant and current panelist on The Chew, a talk/cooking show):  apple pancake rings.  Quite a cute idea.


I didn't follow her recipe exactly, but instead used it as inspiration.  I made a simple (perhaps the simplest) pancake batter, a la Jamie Oliver: 1 cup self-rising flour, 1 cup milk, 1 egg, pinch of salt.  Then I peeled and cored 2 local Malang apples and thinly, thinly sliced them into rings using my mandoline slicer.   I threw the rings into the batter to coat, and then cooked them as I would normal pancakes, on a hot skillet with a little bit of butter.  

So good!  The apple softens up a bit as it cooks, but still maintains a bit of crunch for texture.  Awesome.

Big Crumb Coffee Cake with Malang Apples

Tim's had a rough week at work, so I baked him his favorite, a big crumb coffee cake, to bring to the office to share with his colleagues.  Based on Smitten Kitchen's recipe, I just substituted the rhubarb with some local apples from Malang.  Pretty good!

Apple Pomegranate Fruit Rolls

I had amassed a collection of various types of apples from the CSA that Tim and I never got around to eating for some reason. Since my beef jerky success, I've been wanting to make use of my dehydrator again.

Apples + dehydrator = fruit roll-ups!I peeled and chopped 3 apples, threw them in the food processor with the seeds from half of a pomegranate and the juice from one orange and half a lemon, pureed. Spread the puree on a fruit-roll sheet (and the extra on parchment paper) and dehydrated for about 4 hours.

Pretty good! I need to find a way to strain the puree to rid it of the pomegranate seeds, but still get all of the apple goodness, as the texture was a little weird. But overall, they were pretty tasty, and I didn't have to add any extra sugar.
