Now that I have a functional kitchen in San Diego, I've started getting around to projects I've not had the opportunity to launch, such as:  pickling stuff, preserving stuff, infusing stuff, and making jam out of stuff.

Roasted Potato Salad with Corn, Tomato and a Jalapeno Lime Vinaigrette

Barbara requested a potato salad for her combo housewarming/birthday/last bash before the baby party... after the holiday weekend I felt a little over mayo-laden potato salads, so I decided to research some more funky potato salads.


This potato and corn salad recipe from the Splendid Table calls for lots of sunny summer produce, perfect for using up my fresh-from-the-farm corn on the cob, cherry tomatoes, jalapenos, and red potatoes. I didn't follow the directions exactly since I didn't feel like turning on the grill, but I roasted the potatoes (which I had cut into bite-sized pieces), toasted the corn, onion, and jalapeno in a cast-iron skillet, and just whisked the dressing together rather than busting out and dirtying the blender.

Fresh, tasty, a little spicy, and definitely not mayo-y!

Chile-Braised Pork Tacos with Rhubarb Salsa

Amy bought some tasty looking pork shoulder from Truck Patch Farms via the 14th and U Street Farmers Market, and we had some dried chiles leftover from a delicious batch of pozole she made a few weeks ago. Put them together and you get... ta da... chile-braised pork shoulder tacos! Pretty tasty! I think perhaps next time I would leave a couple seeds in the chiles, though, as it wasn't as spicy as I was hoping for.Coupled with some rhubarb salsa (loosely based on this recipe, but simplified even more- just lime juice, scallion, jalapeno, cilantro, a pinch of sugar), the tacos were a tasty treat. I served them along with some black beans with toasted corn, and followed them up with some delightful Mexican spiced chocolate pudding (which I made a few years ago and loved).

Stacked Veggie Quesadilla

I saw this stacked veggie quesadilla recipe, labeled as a "last minute Super Bowl supper," in the most recent issue of Bon Appetit magazine... we made it tonight while watching the AFC championship game. It's pretty good, but I don't think I'll be serving it at Super Bowl, mostly because it's really hard to eat!!
The flavors were good and it really wasn't very hard (especially since they advocate microwaving pre-cut butternut squash- I cut up my own from the CSA, but did do the microwave thing). However, the stack of tortillas with all of the fillings is super tall and difficult to maneuver. You can't exactly pick it up without it totally falling apart. Part of this difficulty may be due to the fact that we got a little bit overzealous when crisping up our tortillas at the beginning, but I'm not convinced that floppier tortillas would make it any easier to handle.

Just a warning... don't be scared, but definitely bring a fork and knife if you make this!

Spicy Lentil Walnut Burgers

Last year, in an attempt to eat healthier, I bought several different types of dried lentils (brown, red, yellow). A short time later, I inherited even more lentils from Amy when she moved across the world to Australia. Since I came into this wealth of lentils, I think I have cooked lentils ZERO times. This needed to change...

Enter the Other Martha's Spicy Lentil-Walnut Burgers... perfect! Spicy, earthy, easy... plus the burgers help me get over one of my main consistency hang-ups with lentils- they get super crispy on the outside if you cook them slow-and-low. The burgers are pretty big, so be sure to get the larger sized pitas. They also fall apart a little bit, which isn't the end of the world, but not very picturesque (sorry!). The leftovers were great the next day heated up in the toaster oven and served over a green salad with feta, olives, and a vinaigrette.

Okra and Tomatos with Skillet Cornbread

Tonight's meal perfectly captures the transition from summer to fall we're experiencing here in DC... summer ingredients from the CSA (okra, tomatoes, corn on the cob, jalapeno) and a warming, earthy, autumnal hint from the red wine reduction compliment our warm, but not sweaty days and breezy, maybe-I-should-have-brought-a-sweater nights.
Okra and tomatoes are quick-stewed with red wine, onions, garlic, thyme and bay leaves, while the crispy skillet corn bread is kicked up a notch by fresh toasted corn and jalapeno, plus some grated cheddar cheese.

Roasted Jalapeno Popper Dip

I am a sucker for pretty much any and all bar food: saucy and messy hot wings, crispy and bacony potato skins, and spicy and creamy jalapeno poppers. When we had an influx of jalapenos last summer, I made creamy corn and bacon stuffed jalapenos. They were tasty, but stuffing them was time-consuming, and for those who aren't enamored of jalapeno, maybe not the best thing. This jalapeno popper dip, which incorporates all the deliciousness of the bar staple, is much easier and more manageable for heatphobes. Doesn't look like much, but it disappeared in about 2.5 minutes, so that says a lot.I messed with the recipe a little bit... instead of pickled jalapenos and canned green chilies, I halved, seeded, and roasted 3 fresh jalapenos (stuck them under the broiler for 7-8 minutes until soft and charred), then minced them. Added the roasted jalapenos to the food processor with some cream cheese, a dab of mayo, a handful of shredded cheddar and mozzarella, salt and pepper. Poured into a lightly greased baking dish and topped with panko and Parmesan. Baked at 350 for 25 minutes.

Awesome! Served with tortilla chips and veggies.

Black Bean, Sweet Potato, Zucchini Salad with Garlic Lime Dressing

Remember how it was awesome?
Well, for those bell pepper haters in the group, leave them out. The recipe is awesome with zucchini, too. Throw some chopped zucchini into the oven with the sweet potato after it's been roasting for a while... then throw the whole mess on top of some lettuce.

Jalapeno Cheddar Biscuit/Scones

I saw these biscuity scones on Smitten Kitchen and immediately started drooling. I also thought they would go well with the sweet potato and black bean soup I was making.
Mmm: these were great. The outside was crispy and scone-y, while the inside was flaky and layered like a biscuit. Awesome. Best biscuits I've ever made, although I would not call myself a biscuit expert.
The only thing I did differently is to use 1/4 C greek yogurt and 1/4 1% milk in place of the heavy cream since we didn't have any, and I didn't want to brave the rain to go to Giant to get some. The substitution seemed to work out nicely!

Also, these made some awesome ham, egg and cheese sandwiches the next morning:

Goat Cheese, Corn and Bacon Stuffed Jalapenos

Mmm... loosely based on a Bobby Flay recipe, these stuffed jalapenos and cherry peppers were great. We added some cooked and crumbled bacon, which was awesome with the corn, baked them instead of grilling them, and skipped the red pepper sauce, since none of us here is enamored of red peppers.
The stuffing was so good, you could probably just make that and warm it in a pan in the oven and serve it with chips, crackers or veggies. Kinda like Martha's crab dip, but with corn and bacon instead of crab.

Cantaloupe Salsa


I saw this post on cantaloupe salsa from Smitten Kitchen, and it's like she had some inside knowledge of what my CSA had in store for me the following week... cantaloupe, sweet Walla Walla onion, jalapeno.

Sweet, spicy and limey. Mmmm.
