Tim is making his annual March pilgrimage to the a Pogues concert at 9:30 Club, so I decided to cook a mushroom dish while he's gone (he's not a mushroom lover). Beef Stroganoff is one of my all-time favorites, but I'm a little beefed out these days, so I made a chicken Stroganoff instead.
