New Year's Nibbles

We had an awesome New Year's Eve: lots of delicious food, champagne and playing board games and Wii (Just Dance 2 = super fun!).
At Tim's request and to Meghan's delight, I made old-school cheese balls, one just cheddar, one blue cheese and cheddar, both rolled in walnuts, both pretty tasty. I used a recipe from my ancient Better Homes and Gardens cookbook. Better Homes and Gardens is not responsible for the suggestive knife placement, however.I also made 2 types of cute puff pastry swirly things: one with prosciutto, Dijon and Romano, a riff off of Joy the Baker's recipe, and one with feta and spinach. Both tasted great (although the Romano may have been a tad salty, but it's what I had in the house), can be served hot or at room temperature, and the leftovers also reheated well in the oven the next day. Plus, as I said, they were pretty cute.Liz made these awesome mini-roast beef sandwiches with melty Havarti, peach preserves, and chopped walnuts- so good! Plus, they sounded fairly easy to put together, which is always a bonus.Chuck successfully remade a couple of the deviled egg recipes we tried a few months ago... the Sriracha eggs still kick ass, and the herbed deviled eggs are a step up from the usual eggs (although the recipe makes waaaay too much filling). We also had some cute mini-quiches, corn and bead salad, excellent pumpkin bread and other tasty delights...

Crostini with Mushooms, Prosciutto, and Gorgonzola

These crostini with mushrooms, prosciutto and Gorgonzola are a rich and filling appetizer... nothing special to look at, as you can see from the photo, but delicious nonetheless. Good as a starter at a fancier dinner party, for sure.

Phyllo and Prosciutto-Wrapped Asparagus

Lindsay and Tim had a gang of us over for a potluck Easter dinner in their backyard since the weather was so amazing here in DC this weekend... great food, great company, totally inappropriate but hilarious conversation!!
My contribution to the dinner was an asparagus appetizer that was super tasty, although somewhat of a pain to make. It sounds simple enough: prosciutto and phyllo dough wrapped around an asparagus spear, brushed with melted butter and sprinkled with parmesan. Easier said than done, though. The thinly sliced prosciutto is sticky and breaks into pieces, and phyllo is even more finicky and easily torn. But the ultimate product was worth it- salty, crispy, asparagus-y. The motto for making these little buggers should be "less is more"- you need only half a piece of prosciutto and like a quarter of a sheet of phyllo for each one.

Linguine and Prosciutto Mini Frittatas

Everybody loves getting his or her own personal treat... that's why I thought these mini-frittatas I saw on Food Network would be good for our post-Christmas brunch. The mini-frittatas are a Giada recipe, so it's obligatory that I provide you with a video, in case you'd rather watch her (and/or her boobs) make the recipe, than read about it.

This recipe was tasty- the smoked mozzerella is essential, for sure. You could easily substitute veggies for the prosciutto, I bet- sauteed spinach and mushrooms, perhaps? I also think you could make it ahead of time and shove them in the oven in the morning if you're having guests for brunch.

Whole-Wheat Crust Pizza with Arugula, Prosciutto, Tomato and Mozzerella

Made these tasty arugula and prosciutto pizzas last week using the basic whole wheat dough from Healthy Breads in Five Minutes a Day... tasty, although a little poofier than I would have liked. I think I didn't preheat the pizza stone long enough because I was in a hurry.
