Lettuce, Avocado, Tomato and Tempeh Sandwich
I want to preface this blog post by assuring my loyal readers that we have in no way turned our backs on bacon. Delicious, delicious bacon.
With that said, this week Tim and I tried a new, healthier version of the BLT sandwich made using ingredients easier to find in Indonesia. Specifically, this sandwich substitutes tempeh for bacon. I am sure that statement will elicit many eyebrow raises, but this sandwich is actually pretty damn good (despite my weak photo). You can't really think of it as a
BLT substitute, but a new and interesting sandwich in its own right (Heidi from 101 Cookbooks calls it a TLT sandwich, but I think it's more accurate to call it a LATT, don't you?).
The tempeh is marinated such that it has a slightly sweet, salty, smokey flavor, and is then pan fried so it's crisp on the outside. Layer it in the sandwich with creamy avocado, crunchy lettuce and flavor-concentrated roasted tomatoes... not bad, not bad at all. Good enough that I plan to make it again soon.
I followed the recipe for the most part, although I skipped the brown sugar when roasting the tomatoes, as I thought the tempeh had enough sweetness. Give it a try!

Deviled Eggstravanganza!
Chuck had the day off, so she was the devil-er. She rocked out six different and delicious types of devil, as follows, from left to right:
Herbed deviled eggs: chock full of fresh herbs
Lemon dill deviled eggs: similar to the herbed eggs, but with a lemony kick
Chipotle deviled eggs: smoky and spicy
Deviled eggs with capers, dill and cucumber: a little chunky from the cukes and vinegary capers
Avocado deviled eggs: nice in theory, but not devily enough/a little boring
Sriracha deviled eggs: of course, these spicy MFs were the most devilish and, therefore, the best of the bunch

Black Bean and Sweet Potato Enchiladas
These tasty enchilada-esque things were a recipe-less creation from pantry items we had laying around. Laziness and unwillingness to go to the store are the mother of invention, I guess.
I roasted some cubed sweet potatoes in olive oil, sprinkled with some chili powder and cumin (and salt and pepper, of course). The black beans were heated with some minced garlic and onion that I briefly sauteed. Threw it together, topped it with some grated cheddar, wrapped it in a tortilla and put it in a baking dish that I had coated with some salsa verde. Topped the whole thing with some more salsa verde and cheese. Baked at 350 for about 10-15 minutes.
Chuck made some homemade guacamole - mashed an avocado with some grated onion and garlic, minced tomato, lime juice, hot sauce, and cilantro.
Pretty great for a made-up meal!

Smoky Shrimp, Hominy and Tortilla Soup
This smoky and spicy soup is an easy weeknight combo of tortilla soup and pozole (a spicy Mexican pork and hominy stew)... it's really delicious- hearty, smoky, spicy and jazzed up with a little bit of shrimp. It really didn't take much time at all.
We topped ours with salty queso duro blanco, diced avocado, lime and cilantro. Plus, rather than let the corn tortillas dry out overnight, I brushed them with a little olive oil, sprinkled some sea salt on top and threw them on a cookie sheet under the broiler until crispy.
