Spicy Black Bean Balls

Spicy black bean balls... no relation to chocolate salty balls.
Based on this spicy black bean burger recipe from Real Men Eat Green (a cute website from an earnest Canadian trying to convince men that eating and living green is cool/good for you), I decided to make these into dippable balls (ha! I said 'dippable balls'!) rather than burgers since we didn't have any buns.

Served with a chipotle/lime/cilantro sour cream dipping sauce. Mmmm.

Camarones Enchiladas (Shrimp in a Spicy Tomato Sauce)

I've been craving something cooked in a spicy tomato sauce and served with feta since seeing various recipes bandied around the internet of late... Deb from Smitten Kitchen has been making shakshuka (eggs poached in spicy tomato sauce), Kevin from Closet Cooking is making tomato and feta baked eggs, and Alejandra from Always Order Dessert (who I met once in DC, as she used to be coworkers with Andy), had a spread in Real Simple with her mom's recipe for camarones enchiladas, or shrimp in spicy tomato sauce.

I decided to give Alejandra's recipe a try: definitely worth a try. The second recipe for us this week that uses the awesome smoked paprika as the main star.

Chicken Stir Fry with Red Peppers and Broccoli

Another Eating Down the Fridge challenge: used up frozen chicken breasts as well as CSA peppers and broccoli I had chopped up and frozen last summer when we had a glut.
Just like yesterday, I mashed-up two different recipes... Emeril's (which uses ginger and sesame oil) and my favorite stir fry, Jaden's from Steamy Kitchen (which uses oyster sauce and sherry). Came out pretty well considering I used all frozen veggies!
