Asparagus, Pepper and Steak Stir-Fry

Again, to Tim's dismay, the spring asparagus just keeps rolling in from the CSA... I thought I'd shake things up by cooking the asparagus in a stir-fry- turned out pretty well!

I based the stir-fry on this recipe from Simply Recipes, but rather than use flank steak, I used some shaved steak that Tim picked up at Trader Joes to make cheese steaks. I sprinkled sesame seeds on at the end for some crunch.

Chicken Cashew Lettuce Wraps and Sesame Stir-Fried Asparagus

We have a plethora of butter lettuce from the CSA right now- I was a little overzealous when putting in my order the past couple weeks. We're sorta between seasons right now, so the variety of veggies available from the CSA is minimal, but I know it'll boom soon and give us a ton of spring vegetables... in the meantime, we're trying to find lots of uses for the greenhouse grown butter/Boston lettuce we're getting.

Lettuce wraps it is! I've made lettuce wraps once before, back in the early days of the blog, and we liked them. This time I tried a stir-fried chicken and cashew filling- tasty!

Served with simple sesame stir fried asparagus and white rice.

Chicken Stir Fry with Red Peppers and Broccoli

Another Eating Down the Fridge challenge: used up frozen chicken breasts as well as CSA peppers and broccoli I had chopped up and frozen last summer when we had a glut.
Just like yesterday, I mashed-up two different recipes... Emeril's (which uses ginger and sesame oil) and my favorite stir fry, Jaden's from Steamy Kitchen (which uses oyster sauce and sherry). Came out pretty well considering I used all frozen veggies!

Beef, Shrimp and Bok Choy Stir Fry

Remember that week where two days in a row I made recipes I have already made, but switched up the ingredients? It should be fresh in your mind because it's this week.
I made this stir-fry last week with beef and broccoli, and it was so easy and good, I decided to try it again this week with the bok choy I got in my CSA. I threw in about 10 shrimp for good measure and cooked the boy choy stems longer than the bok choy leaves, but otherwise followed Steamy Kitchen's method. Yum.

Beef and Broccoli Stir Fry

Yum... Steamy Kitchen (guest blogging at Simply Recipes) strikes again. I made this super easy beef and broccoli recipe, with only a few additions. I gave the sauce a big squirt of Sriracha for some heat, threw in some chopped scallions with the broccoli, and added an extra clove of garlic, because, well... duh. Served it on steamed white rice. Really tasty. Better than take-out Chinese.
My main recommendation is this: have all of the ingredients ready before you start cooking: pre-chopped, pre-measured and pre-mixed. Stir fry cooks so quickly, you don't have time to measure once the action starts.

Beef and Nectarine Stir Fry

I got some nectarines in my CSA last week, and wanted to use them in a savory way, rather than in a dessert. This stir fry recipe came from Jaden at Steamy Kitchen; she blogs about a lot of simple Asian recipes. I made a couple modifications: used 3 green onions instead of the red onion, 2 nectarines instead of just one (it didn't seem like enough).
I liked the combination of the sweet/tart nectarines and the beef (and how easy the recipe is). However, Tim and I agreed that we would add some heat to this if we were to make it again. Maybe red pepper flakes in with the beef?
